Sicilian Style Pan Seared Fish with Couscous

Chef Jasper White says that since this version of Tuna Carpaccio was inspired by Mary Ann, he decided to name it after her. After testing it, he decided that it is so good that he has run it as a special at his restaurant.
The fennel pollen in the recipe is optional. It is a great addition but it is expensive and not that easy to find. The aged balsamic vinegar, which is sweet and syrupy, is expensive too, but it is important to this preparation – you only need a little bit.
