Don’t Take Pomegranates for Granted

January 12, 2015

Pomegranates will not last long; as soon as the holidays are over, they seem to disappear. Stock up and use a juicer to juice them, then freeze the juice for future use. You can also freeze the seeds and use them to make sauces for fish, pork and desserts. High in antioxidants and vitamin C, don’t let them disappear without making the most of them now. Easiest way to seed them is to cut them in half and turn them cut side down on a cutting board and press on the skins with a flat meat pounder or a soup can.

Here are some great pomegranate recipes:
Ricotta Cheesecake with Pomegranate Sauce
Oven-Roasted Pork Tenderloin with Pomegranate Sauce
Belgian Endive, Pomegranate and Orange Salad
