Easy Make Ahead  Beef Stew Supper

December is busy, so cut down on holiday stress and cook meals ahead for the week that taste better a couple of days later. Beef stew is the perfect choice.

For 4, start with 2 pounds stew beef; rub the beef cubes in your favorite seasonings and set aside. In a casserole or Dutch oven or heavy duty stove to oven pot, heat 2 tablespoons olive oil. Add 1 large diced red onion and cook until wilted; add 2 cloves minced garlic and cook 1 to 2 minutes. Transfer to a bowl; in the same pan, add beef and brown well on all sides; return onions and garlic to the pan; Add  3 carrots cut into chunks, two potatoes, peeled and cut into chunks and cook a couple of minutes. Add 2/3 cup red wine and allow it to come to a boil. Turn off heat, Stir in 1 tablespoon rosemary, 2 tablespoons minced fresh parsley and 1 teaspoon oregano. Cover pot and cook at 325F until meat is fork tender, about 45 minutes. Correct seasoning with salt and pepper.
