Holiday Poached Pears

Poached pears are a no guilt holiday treat that you can assemble in no time.

Cut not overly ripe pears in half lengthwise and scoop out seeds. Place the halves in a casserole dish in a single layer, cut side down.

Combine 2 cups fresh apple cider, 1/2 teaspoon ground cinnamon a pinch of cloves, a grinding of nutmeg and a pinch of salt in a bowl and mix well. Add the grated zest and juice of one orange and pour over pears. Cover and poach until a knife is easily inserted into the pears, about 30 minutes.

Transfer pears to a dish with a slotted spoon and reduce the cider mixture by half over medium heat. Swirl in a pat of butter and pour liquid over the pears.

Serve warm with some of the juices.
