How Does Your Garden Grow?

August 14, 2023

My garden has had a runaway takeover by zucchini. Otherwise, it has been a so-so year given the unpredictable weather. Stunted looking tomatoes, peppers taking their good old time to see red and eggplant still resisting ripeness makes for a gardener’s discouragement.

But zucchini…survives and thrives no matter what! I have a list of what to do with the overabundance including leaving it on my neighbors’ doorsteps and making this moist zucchini walnut bread that is just sweet enough to serve for breakfast or become the banket for egg salad sandwiches.
