Let’s Hear It for Eggplant!

Eggplant is without question one of the most beloved vegetables of southern Italy (even though it it technically a fruit). This is especially true in Sicily where the hot climate is perfect for growing them.

How are they prepared? Well, we all know eggplant Parmigiana, but besides that, they are a key ingredient for caponata and pasta alla Norma. In Sicily, Parmesan cheese is often replaced with caciocavallo cheese, with pine nuts and raisins added to the layers. There are many versions.

Besides parmigiana style, I often hollow out and stuff eggplant halves with couscous. The bonus is that this is a complete meal in an edible shell!
