Mixed Grilled Cheese Sandwich

A mixed grilled chees sandwich gets new life with the addition of sliced apples. It’s what’s for lunch today!

Mixed Grilled Cheese Sandwich
Makes 2 Sandwiches

4 slices whole grain bread or bread of your choice
4 tablespoons butter, softened
1-cup grated Swiss cheese
1-cup grated cheddar cheese
1 large Pink Lady apple, thinly sliced

Brush the inside of two bread slices with some of the butter.

Mix the cheeses together in a small bowl

Divide and sprinkle 2 slices of bread with half of the cheese.

Add two or three apple slices over the cheese. Then sprinkle the remaining cheese over the apple slices.

Brush the remaining two slices of bread with some of the butter and cover the cheese with the slices.

Heat a panini maker on the grill settling. Brush the outside of each sandwich with some of the butter and place on the grill. Close grill top and cook until cheese begins to melt. Turn and brush the other side with butter. Close top and cook a minute or two longer.

To make in a skillet, heat a non-stick frying pan large enough to hold the two sandwiches. Over medium heat, press on the sandwiches with a wide face metal spatula and when the bread begins to brown on the underside, turn it over, brush with the remaining butter and cook until the cheese begins to melt.

Serve warm.
