Pasta Knows No Limits

Pasta is such a foil for many kinds of ingredients and this bowtie (farfalle in Italian meaning butterfly) came together in just a few minutes! Start with 2 tablespoons olive oil and heat it in a sauce pan; add 1 diced small onion and cook it until it wilts. Add 2 minced fresh garlic cloves and cook 1 minute, stirring frequently. Add 1/4 teaspoon( or more) hot red flakes or pepper paste and stir into ingredients. Add 1 cup halved green olives (from a jar of brined green olives.) Stir in 1/2 cup diced sun dried tomatoes, juice and zest of 1 medium lemon and cook a couple of minutes. Add 1 pound medium-size cooked and shelled shrimp. Cover and keep warm.

Boil 1/2 pound farfalle (aka bowties) until al dente; scoop 1/2 cup of the cooking water and add to the pan with the shrimp. Stir well; drain the farfalle and add to the the pan with the shrimp mixture. Combine well with the ingredients until everything is hot; season with salt and pepper and serve 4 hungry people.
