Spaghetti alle Vongole

Spaghetti alle vongole is a classic Neapolitan dish for clams in red sauce. What makes this dish so popular with the Neapolitans is the sweetness of the tiny clams and the fact that the Naples area is home to those fabulous plum tomatoes called San Marzano. And even though our clams are much different, try using Manilla or mahogany clams to approximate the flavor and if you can, use San Marzano DOP tomatoes. The added beauty of this dish is that it can be made in minutes and has a clean, satisfying taste that is perfect for a quick supper or a company meal.
