Called Romanesco, this Italian variety of zucchini has few seeds and a creamy texture when cooked. There are numerous ways to prepare it; it is great just sauteed with onions or add diced potatoes for a great side dish to a summer steak. Layer thin, long slices in a casserole dish and make a lasagna. Cut them into matchstick pieces and get some fries. Shred it and add it to your meatball mixture. Make zucchini fritters, zucchini pasta sauce, zucchini cake, or how about these cute little zucchini sandwiches.
