Zucchini…The Vegetable for All Seasons

Zucchini knows no season even though summer is the best time to enjoy them in my opinion. Spilling out of home gardens and showing off at farmers markets with their bright frilly yellow flowers that by the way, are good batter fried or stuffed and baked, zucchini  is a tempting little bugger that knows no end or season as to the ways it can be used. Who hasn’t made zucchini bread, zucchini soup, zucchini noodles, fried zucchini, stuffed zucchini, zucchini lasagne, zucchini pancakes, pizza, smoothies, muffins and stir fry to name a few examples. But the surprise in my kitchen is the zucchini meatball. Compact, moist and I- can’t- believe- this- is- zucchini, gets two thumbs up every time and the best part is that the kids never ask where’s the beef?
