Crazy for Cauliflower

Some vegetables just have to try harder to be liked. Take cauliflower for instance. It looks complicated to deal with like artichokes. How does one start to tackle them? Sure, you can buy already prepped cauliflower florets (small bite pieces of cauliflower) all bagged and even get it “riced” but it is just as easy and cheaper too, to turn a whole head of cauliflower upside down and cut around the core with a knife, allowing the florets to just break away.

Now you have options; cut or break the florets into smaller size or keep them chunky depending on how you use them. I am crazy for this powerhouse-good-for-you cruciferous vegetable; it is great batter fried, sauteed for stir-fry and makes a great substitute for mashed potatoes. I have even roasted a whole head! As we transition from winter to spring, this nifty cauliflower casserole will win over even the most stubborn cauliflower hater.
